And Even More Holiday Recipes - Prize Coffee Cake

Here's a family classic. Although you ate it over Thanksgiving when it was a day or two old, it's best fresh and warm from the oven.

Coffee Cake:
3/4 C Sugar
1/4 C Shortening
1 Egg
1/2 C Milk
1 1/2 C Flour
2 tsp baking soda
1/2 tsp salt

Heat oven to 375. Grease and flour a round cake pan. Mix sugar, shortening, and egg thoroughly. Stir in milk. Measure flour using dip-level-pour or by sifting. Blend dry ingredients and then add to wet.

Spread half the batter in the cake pan. Note the batter is sticky. I've found it best to drop clumps around the pan and then gently spread it. Add Streusel to the center. Then spread the rest of the batter on top. Then add the rest of the streusel to the top.

Streusel Filling:

1/2 C brown sugar (packed)
2 Tbsp flour
2 tsp cinnamon
2 Tbsp melted butter

Melt butter and mix with the other ingredients.

Bake for 25-25 minutes until a toothpick comes out clean. Let sit for a couple of minutes. Then flip the cake out onto a plate and then flip onto another plate so that the cake is right side up. Serve when still warm.
